Strawberry and Lime Cheesecake – baked

I found this recipe in a child’s cookery book and thought it would be an easy one to do with my daughter. I have to say it looked fab. However, I thought it was a bit of a strange, cake like texture and had a lack of flavour. The family gave a mixed verdict. Nice if you like cake I guess, but not for us.

It is not overly difficult to make, although I have posted easier, but it is fiddly and takes a long time to bake.

Ingredients

For the cheesecake
  • 4 trifle sponges
  • 1 lime
  • 400g (13 oz) full-fat cream cheese
  • 125g (4oz) caster sugar
  • 2 tablespoons plain flour
  • 4 eggs
For the topping
  • 150g (5oz) full-fat creme fraiche
  • 250g (8oz) strawberries

Preparation method

1. Turn the oven to 160°C/325°F/Gas Mark 3

2. Line an 8inch round tin with baking paper

3. Cut the sponges in half horizontally and then into triangles and arrange them across the base of the tin

4. Grate the rind from the lime and then squeeze the juice out

5. Mix together the cream cheese, sugar and flour

6. Separate the eggs and add the yolks to the cream cheese mixture

7. Whisk the egg whites until they are thick

8. Beat the cream cheese mix until smooth and then add the lime juice and rind

9. Fold the egg whites into the mix gently

10. Pour the mix into the tin and bake in the oven for 50-60 minutes until it is a pale gold colour and the middle wobbles slightly

11. Turn the oven off, open the door slightly and leave the cake in the oven for a further 15 minutes before removing from the oven to cool completely

12. Remove the cheesecake from the tin, top with the creme fraiche and strawberries and serve

    • If you like baked cheesecake, I recommend the other one I posted – strawberry and white chocolate. That is very nice!
      Also – very jealous of your new oven.

    • Reading about it is allowed, but you have to try making it before you really appreciate the full fat content :)
